Tomato Salad Recipe
Balsamic Tomatoes are popular in steak houses and restaurants.
Most versions are a thick single slice of large ripe tomato, a slice of onion, a slice of fresh Mozzeralla, a drizzle of Virgin Olive oil, Aged Balsalmic Vinegar and topped with fresh Basil.
Versions of this simple recipe were in most antipasto dishes served at our Italian family functions.
The simple home version was, cut up a few tomatoes in bite size chunks, dice a little onion, toss them in olive oil,
vinegar ( red wine or Balsamic), salt, pepper, a sprinkle of dried oregano or fresh basil.
The basic ingredients are the same. The size, style and preparation are what makes each recipe unique.
Colorful and tasty Heirloom tomatoes have become available and really light up tomato salad recipes. Smaller sized tomatoes such as Cherry and Grape tomatoes, also available in colors, change the look and feel of a tomato salad.

I will show a couple of my favorie tomato salad recipes. Use your imagination and create your own summer salad specialty.
Quarter tomatoes and pop out seed sacks, chop remaining hard parts of tomatoes.
Place chopped tomatoes in a bowl.
Dice sweet onion, mince shallots and add to tomatoes. Add minced fresh basil, toss ingedients while drizzling Virgin Olive oil and Balsalmic vinegar. Salt and Pepper to taste. Serve chilled.
3 Medium tomatoes, 1 1/2 cups chopped small
1/2 small Sweet Onion, diced
1 Shallot, minced
1 tbsp Fresh basil, minced
1 oz. ( 2 tbsp) Virgin Olive Oil
1 oz. ( 2 tbsp) Aged Balsalmic Vinegar Sea Salt(fine) and gound Black Pepper to taste
Chopping the pieces will make a nice stand alone salad. Cutting the tomato into slices, and it becomes our family style recipe mentioned above. Also try Heirloom, grape and Cherry tomatoes.
RECIPES - Using this recipe as a base and introducing new ingredients can add style to the dish.
TOMATO CRAB SALAD - Change tomatoes to regular chopped. Substitute Basil for 1 Tsp of OLD BAY seafood seasoning. Substitute Balsalmic vinegar for Sherry vinegar. Add 1 cup of lumb Crab Meat.
TOMATO, AVOCADO & ARTICHOKE SALAD - Change tomatoes to chopped. Substitute Balsamic Vinegar for Sherry vinegar. Add 1/2 cup Avocado chunks and 1/2 cup quartered Marinated Artichoke Hearts.
TOMATOES ITALIANO - Add 1/2 cup Mixed Italian Olives seeded and chopped. 1/2 Cup Garbonzo Beans(chick Peas). 1/4 cup Pine nuts.
