Fresh Tomato Salsa Recipes

I'll give a basic tried and true salsa recipe and variations for flavor and style.
FRESH TOMATO SALSA RECIPE
Quarter tomatoes, pop out seeds if necessary and dice. Add onions, peppers, key lime juice, cilantro, salt and pepper. Gently mix and chill. Serve with warm tortilla chips.
4 medium Tomatoes, red or your favorite color(s).
1 small Sweet Onion, approx. 1/2 cup, minced (or use red onion)
2 small jalapeno peppers, red, green or both, seeded and minced
2 tbsp Key lime juice
1/3 cup Cilantro
1/4 tsp Course Sea Salt
1/8 tsp fresh ground Black Pepper
VARIATIONS - Fresh Tomato Salsa Recipe
TOMATOES - Pick a color any color. Size of the cut determines what kind of salsa you'll get. My recipe is diced medium size and tends to be a little less wet. A larger chop will produce a nice chunky version. Finely mincing or mixing everything in a blender yields more of a mush consistancy. (easier for dipping) Fresh Tomato Salsa Recipes are Tomato Salad Recipes chopped a little smaller with cilantro in place of the basil.
ONIONS - Mix it up a little. Replace with finely minced scallions, shallots or mix all three. Chop to match the tomatoes, Usually a couple sizes smaller.
PEPPERS - Add more or less according to you or your guests tolerance to heat. If available, use a Serrrano pepper to replace one of the Jalapenos.
KEY LIME JUICE - If none is available use 1 tbsp lemon juice and 1 tbsp lime juice.
CILANTRO - Alter the amount to your taste. Example: My wife would use a whole cup vs. I'm OK with 1/4 cup.
